Healthier Lasagna Recipe

There’s nothing like comfort food, especially lasagna. I love lasagna and any kind of pasta really. I could probably live off pasta and be quite satisfied for the rest of my life. This homemade lasagna recipe will certainly satisfy your hunger.

Having had so many digestive issues, my gut can’t handle certain foods. So this healthier lasagna recipe is made with ingredients that are slightly different, and healthier, than typical lasagna ingredients.

Ingredients

First of all, this homemade lasagna recipe is made with organic, BPA-free ingredients (as usual). In addition, it’s made with kamut pasta, avocado oil and topped with feta goat cheese.

Kamut and goat cheese are both easier to digest and therefore better for you. Kamut is a resistant starch and it helps you to feel full faster. It’s known as “the wheat you can eat”.

Goat cheese doesn’t contain the A1 casein that most people cannot tolerate; it also contains less lactose than many kinds of cheese. These are the reasons it’s easier to digest.

This healthy lasagna recipe also contains ricotta cheese. Ricotta cheese contains little lactose as well.

Healthy Homemade Lasagna Recipe
Ingredients
  • 1 pkg kamut lasagna pasta
  • 1 8 oz container organic spinach
  • 2 tbsp avocado oil
  • 1 8 oz container organic mushrooms
  • ½-1 organic onion
  • ½ organic red orange or yellow pepper
  • 1 lb grass fed ground beef
  • 1 tsp worchestersire sauce
  • 1 jar organic spaghetti sauce
  • 1 can organic BPA-free diced tomatoes (drain juice)
  • ½ - 1 tsp organic garlic powder
  • 1 tsp organic oregano
  • 1 tsp organic basil
  • ½ tsp celtic sea salt
  • 1 container ricotta cheese
  • 200 gm goat’s milk mozzarella cheese
Instructions
  1. Boil pasta (do not boil too long or noodles will be too soft to pick up) and steam spinach, each for about 10 minutes
  2. While pasta is boiling, dice mushrooms, onions and peppers
  3. Saute mushrooms, onions and peppers in avocado oil for about 5 minutes
  4. When noodles are ready, drain and rinse with cold water (to remove excess starch)
  5. Squeeze spinach with a fork to remove excess water
  6. Add ground beef to mushrooms, onions and peppers
  7. Pour in worcestershire sauce and heat until ground beef is cooked (no pink)
  8. Drain excess liquid (fat) from ground beef (if any) and return to pot
  9. Drain tomatoes
  10. Add spaghetti sauce, diced tomatoes, garlic, spices and salt
  11. Pour excess liquid from tomatoes on bottom of lasagna dish
  12. Layer noodles on bottom of dish
  13. Pour spaghetti sauce over noodles
  14. Add another layer of noodles on top of sauce
  15. Top sauce layer with ricotta cheese
  16. Add another layer of noodles
  17. Pour remaining sauce over noodles
  18. Add last layer of noodles
  19. Grate mozzarella cheese and place over top layer of noodles
  20. Bake (covered) at 350 degrees F for 30 min
