Healthy homemade fruit explosion muffins

You know those really tasty muffins from Tim Hortons? You know, the ones that are loaded with fruit and jam? Thos are fruit explosion muffins that I’m referring too and they are sooo good.
But, they are loaded with sugar, and they’re not good for you at all. Well, except maybe for the fruit. But then again, the fruit is not organic either. So, how about we make some healthy homemade fruit explosion muffins instead – made with natural (unrefined) sugar?
Homemade apple sauce
I had some organic apples that were going bad. They were still edible but getting quite soft. I really don’t like soft apples. I also hate wasting food.
Then I thought, they would be great in some healthy homemade fruit explosion muffins. Perfect!
So I made some homemade organic applesauce using my much-loved food processor and I added them to my healthy homemade fruit explosion muffin recipe.
These homemade fruit explosion muffins turned out very well. They’re very tasty and, as the title suggests, exploding with fruit. There are three kinds of fruit in these muffins – apples, strawberries (aka organic strawberry jam sweetened with fruit juice) and blueberries.
However, although there is plenty of fruit in these healthy homemade fruit explosion muffins, I did find that the addition of more (or other) fruit would have been even better; or perhaps chunks of apples instead (not for me though, I hate cooked apple ;)).
The only (minor) complaint I have about these muffins is that they don’t rise as much as I would have liked. Now, I did open the oven before they were finished because they took longer to bake than expected, so that might have caused them to fall.
If not, perhaps next time I could just add more baking powder? I’m not sure and I don’t want to mess with a good recipe. So if you know of a sure solution please let me know and I will be sure to tweak the recipe. Now, speaking of the recipe, let’s get to it.
Dairy-free, lactose-free, refined-sugar-free
- 1 ½ c sprouted spelt flour or sprouted whole wheat flour
- 1 tsp baking powder aluminum-free
- 1 tsp baking soda
- ½ tsp celtic sea salt
- 1/3 cup coconut oil
- 1 cup coconut sugar or date sugar
- 1 free-range egg
- 1 cup organic applesauce
- 1-2 cups organic blueberries
- 6 tbsp organic jam *
Preheat oven to 350 degrees Fahrenheit.
Combine the flour, baking soda, baking powder and sea salt (dry ingredients). Mix well and set aside.
In a separate bowl, cream the coconut oil and coconut sugar.
Add an egg to the coconut oil and coconut sugar (wet ingredients). Mix well.
Add applesauce to the wet ingredients. Mix until combined.
Add the dry ingredients to the wet ingredients and stir just until combined.
Fold in the blueberries.
Using a cookie scoop, fill each muffin tin with two full scoops of muffin mix (or one ice cream scoop full).
Gently pat down the muffin mix, then using your thumb or the scoop, make an indent in each one.
Fill each one with approx 1/2 tablespoon of jam.
For each one, add another scoop and a half of muffin mix on top of the jam.
Bake for approx 30 minutes.
They are done when an inserted toothpick comes out clean.
*This is the kind of jam that I used. However, I used the kind that is naturally sweetened with fruit.

I am very frugal. My mom taught me well. I always hunt down the best products for the best price. Here is a list of what I used and where I bought it.
- Sprouted whole wheat or sprouted spelt (you can buy regular instead of sprouted) – local grocery store (Sobeys)
- Coconut oil & ghee – Costco
- Coconut sugar – Costco (I stock up before Christmas)
