I used spelt in these healthy apple cinnamon muffins but you could easily substitute another type of flour. These muffins are moist and yummy!

Healthy apple cinnamon muffins

I finally hit the jackpot with these healthy apple cinnamon muffins; they are delicious and good for you. I tried dozens of times to make free from (free of refined sugar, etc) muffins. They often came out dry or crumbly, or wet in the middle because I was using the wrong kind of flour.

I have come to realize that the best way to make a great recipe is to start with a recipe that is already great. Hence, this is what I often do. I always give props to the original chef.

Durum wheat substitutes

I recommend trying ancient grains such as spelt or kamut or sprouted whole wheat. These grains are easier to digest than durum wheat, and they are better for you. You may find that you can eat these grains without issue.

Kamut is known as the wheat you can eat. Sprouted grains offer many health benefits. Learn more about sprouted grains.

I used spelt in this recipe because it has a very mild flavour, and these muffins turned out so yummy! These healthy apple cinnamon muffins are moist, delicious and they stay fresh for about a week. You will love these delicious muffins!

Healthy Apple Cinnamon Muffins with Spelt

*Dairy-free, lactose-free and refined-sugar free.

  • 1 1/2 c quick oats
  • 1 c spelt
  • 1 tbsp baking powder aluminum free
  • 2 tsp ground cinnamon
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 c date sugar and ½ c coconut sugar*
  • 1 c chopped walnuts or pecans
  • 1 egg
  • 3/4 c coconut milk
  • 3/4 c applesauce
  • 1/3 c avocado oil
  • 1 tsp vanilla
  1. Heat oven to 400 Fahrenheit.
  2. Mix dry ingredients in a bowl (oats, flour, baking powder, cinnamon, baking soda, salt, sugars and nuts).
  3. Add wet ingredients (egg, coconut milk, applesauce, avocado oil, vanilla) in a separate bowl and add to dry ingredients. Combine just until blended.
  4. Spoon into muffin liners. Bake for 20 min or until inserted toothpick comes out clean.

*I used half date sugar and half coconut sugar because date sugar is very expensive.
