This Greek pasta salad with homemade Greek dressing is a light, healthy meal that is great for lunch or dinner, especially in the summertime.
Greek pasta salad with homemade Greek dressing
I love this Greek pasta salad with homemade Greek dressing. Sometimes in the evenings, especially in the summertime, I don’t feel like a heavy meal for supper.
My husband grew up this way – having a heavier meal for lunch and a light meal for supper. They say it’s best to eat this way anyhow. You may have heard the saying “Eat breakfast like a King, eat lunch like a Prince and eat dinner like a Pauper”.
That’s why this Greek pasta salad is perfect for dinner. Being a light meal, it is perfect for the summer as well. This Greek pasta salad is a healthy meal that is great for lunch as well. The bonus is that it doesn’t take long to make.
I used spelt pasta in this Greek pasta salad. Spelt is a better choice than typical (modern) durum wheat pasta. Kamut is a better choice as well. These grains are easier to digest than durum wheat and better for those with sensitivities and intolerances. I prefer spelt (in breads, pastas and baked goods). It has a milder taste than kamut. Both are great choices though.
I also used extra virgin olive oil in this Greek pasta salad as well as feta (goat) cheese, apple cider vinegar and raw local honey.
Extra virgin olive oil is very healthy in a dressing but it is not good to cook (or fry) with olive oil as it has a low smoke point (meaning it becomes carcinogenic if you use it with high heat).
Goat cheese is easier to digest than cheese made from cow’s milk because it does not have the A1 casein that many people cannot tolerate.
- 1 c spelt pasta
- a few slices of organic cucumber
- a handful of organic cherry tomatoes
- a couple of slices of organic red onion
- a handful of organic olives optional
- ¼ c feta cheese
- ¼ c extra virgin olive oil
- ¼ c apple cider vinegar
- ½ organic lemon juice
- 2 cloves organic garlic
- ½ tsp organic dried oregano
- ½ tsp celtic sea salt
- ¼ tsp pepper
- ¼ tsp raw honey*
Boil water and cook pasta (according to package directions and taste).
Chop cucumber and onion.
Combine all ingredients.
Add olive oil to a glass bottle/jar.
Pour in vinegar.
Squeeze juice of half a lemon into jar.
Chop garlic and add to jar.
Add oregano, sea salt, pepper and honey.
*You may have some leftover homemade Greek dressing. You can keep this in the fridge and use it again. However, the oil and vinegar will separate.
*If you’re looking for more protein, you could add chicken to this Greek pasta salad to make it more filling.
